Blind Pig Adds Sandwich Shops in Irvine, Anaheim

A Trough sandwich shop will soft-open in late May in Anaheim and The Blind Pig Restaurant Group has plans for another, coming in late November or December to Irvine. That makes three for this concept, including its first location in Rancho Santa Margarita.

They were conceived by owner Tony Monaco, founder of The Blind Pig Kitchen + Bar restaurants in Rancho Santa Margarita and Yorba Linda.

His Trough concept focuses on breakfast and lunch with hot and cold sandwiches on a menu originally created by Karl Pfleider, executive chef for The Blind Pig. General Manager Brandin Duda has added more sandwiches and continues to refresh the menu with new items.

The breakfast burrito, stuffed with tater tots, cheddar cheese, an egg and your choice of bacon, steak, sausage, ham or chicken, is a signature item, Monaco said. “Last week we sold 1,100 in a week at our RSM location.”

The Anaheim location takes the 1,500 square-foot spot of a former Flame Broiler. It will soft open in late May and grand open in early to mid-June.

The Irvine restaurant will be 1,800 square feet and it’s coming to the new restaurant pad, Eighteen Main, which is owned by Emmes  Realty Services of California. Trough joins other eateries, such as The Goldfinch, Porch & Swing, Kit Coffee, Sol Mexican Cocina and Madeleine Café & Bakery.

“We are happy to be a part of the Eighteen Main vision and being the sole fast-casual lunch concept within the complex,” said Monaco. “It’ll be a fun little mix of restaurants in that area. So we’re excited to have really cool neighbors.”

Anaheim has about 25 seats with a small patio and Irvine will be about 40. Both will serve craft beer and wine. Pricing will be similar to the other locations with most sandwiches at $9-$12.50.

Open: 7 a.m.-4 p.m. in Rancho Santa Margarita; 7 a.m.-4 p.m. when it soft opens in late May in Anaheim, hours will be extended later. Irvine shop slated to open in November or December.
